Madhya Pradesh is home to people from all over India. Hence the cuisine of the Heart of India shows significant influences of the cuisine of other states—particularly Rajasthan and Gujarat. Maybe this is because the state is bordered by these states. This is not to suggest that MP’s cuisine is only heavily influenced by the cuisine of other states and has that it has no distinct cuisine of its own. For instance, Malwa Food is MPs own cuisine, though being a rather large state, Madhya Pradesh has various other types of cuisines also that interestingly varies from one region to another.
While wheat and meat dominate the food of the northern and western MP, rice and fish rule the food prepared in the southern and eastern MP. On the whole, wheat/corn and milk constitute the main ingredients of the various food items prepared in the state.
Wheat/corn and milk are generously used to prepare the various sumptuous sweet delicacies such as Mawa-Beti, Shreekhand, Malpua, Khopra Pak, Poha Jalebi and Bhutte Ka Kees. These highly delicious food items much tickle the taste buds of the vegetarians and the non-vegetarians alike.
The non-vegetarians also draw much comfort from the many non-vegetarian delicacies for which the state is much famous for such as Korma, Seekh Kabab and Shami Kabab. Even though all these non-vegetarian food items are big hits with the gourmet, it is the highly delicious, spicy and aromatic Rogan Josh of Bhopal, the state capital, which inspires the food lovers the most and makes MP a food lover’s paradise.
